Passed down recipes, tried and true. Using Texas brisket and Carolina barbecue to gather ‘round the table.

 

For Tommy, it all started at family gatherings in Princeton, NC. Tried and true family recipes were thread into every holiday gathering, and countless photos picture gatherings around the ‘smoker’.

Cinder block pits in the driveway, re-bar supports for whole hog smoking. Extra tin roofing to cover the pit, keeping the heat in.

Nothing can beat wood, fire, smoke, and heat, so it was kept simple-- letting the flavor speak for itself. Tommy’s sweetest summers and holidays were spent in a small town eating good food with great people.
